Sweet Side Dish: Baked Pineapple

This is a departure from my regular posts to give you a unique side dish for your holiday meals.  It’s sweet and savory and goes great with both ham and turkey.  It’s a favorite in our family and I have a big pan baking in my oven as I type.  I usually secretly hope that there’s nobody else that likes this so I can eat it for breakfast, but MOVING ON…

INGREDIENTS:

  • 1 20oz. Can Pineapple Chunks
  • 1 C. Shredded Cheese (I use Mild Cheddar)
  • 1 C. Bread Cubes
  • 1 C. Sugar
  • 3 Tbsp. Flour
  • Butter

 

Drain juice from pineapple and reserve.  Wisk together juice with sugar and flour.  Toss together pineapple, cheese & bread cubes in a baking pan.  Pour juice mixture over it, pressing the bread crumbs down to get make them nice and saturated.  Dot heavy with butter and pop into a 350° oven for 45 minutes (uncovered).
